VIP Dinner

Raspberry Mousse Dome with Hazelnut Truffle Center, Chocolate Hazelnut Dacquoise, Dark Chocolate Ganache

Made for a VIP dinner at work. The flavor combination is this particular person's favorite. The entire dessert is fabulous but it's the cake at the base that is to die for. It's chocolatey, chewy and the hazelnut meal adds just the right flavor to it. We also make an almond version that sits under a passionfruit panna cotta that is good and suits that dessert but I'd pick the hazelnut every time.

We don't actually change the menu til the 23rd but I got the plates approved by the F&B Director today and that means... PICTURES!

Vanilla Bean Creme Brulee with cookies and berries

Coconut Mousee Pyramid with Raspberry Center, butter tuile, mango and raspberry sauce

Passionfruit Pannacotta with Chocolate Dacquoise, White chocolate truffle curl, raspberry sauce and anglaise.

Black & White Cake (devil's food with white chocolate mousse), raspberry sauce and anglaise

Time Flies

How did it get to be the middle of February already?? Been working my patooty off. 300 desserts out the door for the dreaded v-day weekend. ( If I ever get the 14th off I'm spending it at home!! probably doing nothing but not going out.)
I'm having my 2nd day off this month and I'm BORED!! Have a long list of non-fun things to get done but...

Menu changes happen this weekend. I will post pics next week.
